    Delicious cheese cake! I swapped out the shortbread for gingernuts and did it more like a traditional cheese cake with biscuit base rather than the dusting James has. The roasting of the rhubarb didn’t work for me, I ended up with a buttery mess so I just stewed some rhubarb like I usually would. The flavour was delicious though!
