    I took a few liberties with this soup so not sure how far the flavour has strayed from the original, but it is really good, earthy and tasty with a touch of sweet. Changes I made: sweated the veg and added a big bacon bone and a peeled and diced apple (I read that in another recipe), simmered the stock for about an hour. Then added the chestnuts for a further 45 mins, blitzed the soup and done. Will feature in future Christmas menus. Note: there is an online version of this recipe, but it differs from the book.
