    I eliminated combining the onions and remaining ingredients in a pot and bringing to a boil before adding to the browned ribs in the slow cooker. It seems pointless since everything is cooked for 10 hours. Instead, after browning the ribs, I put them in the cooker, scattered the garlic and onions over and combined the rest and poured over everything. After 10 hours the meat was fork tender and falling off the bones. The flavor of the "gravy" was complex,rich and absolutely delicious. I recommend making ahead, chilling to solidify the fat, skimming off the fat that rises to the top and re-warming.
