    Can substitute ham hock for ham bone. Black turtle beans soak overnight.

    I tinkered around with this and we liked the result. Used chicken broth, not water. Added 1 teaspoon ground cumin, some chopped fresh oregano, a pinch cayenne, 1/2 a red bell pepper, chopped. Stirred in a teaspoon each of brown sugar and lemon juice before serving. Garnished with chopped Italian parsley.
