    The texture of this cookie is my platonic ideal of crispy bottom, chewy edge and soft but firm middle! The flavors and textures encountered in a bite of these cookies are different and lovely. I substituted 3/4 teas rum extract for the 2 teaspoons dark rum. Delighted with this recipe and I look forward to trying more with this fantastic out-of-print book I found at a thrift store.
