    This is now officially my signature salad. The dressing is fabulous and I make it several times a week. My iron levels must be spectacular? Everyone who tries it wants the recipe. I buy artichokes from Aldi for a fraction of the price I'd pay in Waitrose and blot them on kitchen paper, I also fry up pancetta (also from Aldi, ready chopped) and blot them likewise. Not sure how diet it is once I've done this but it hasn't stopped me losing a stone over the last 6 months. I use frozen broad beans and peel them after blanching, usually the night before in front of the telly!
