Light and fluffy pancakes from Cook's Illustrated Magazine, Jan/Feb 1996 (page 8) by Pam Anderson and Karen Tack

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This pancake batter looked very promising. Whipping the egg whites with the buttermilk made the batter very fluffy. Instead of mixing the egg yolks with the melted butter, I mixed the yolks into the buttermilk mixture then added the melted butter before mixing into the dry ingredients. Still very fluffy. However, when they cooked, they did not stay so fluffy. These pancakes were good, but not as fluffy as I expected.
