Marmalade chicken from EatingWell Magazine, Jan/Feb 2009 (page 24)

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

This will be a go to easy weeknight meal. I thought the sauce thickened up nicely and in a short amount of time. The flavor was sublime, not sure if it was due to the quality of the Seville Orange Marmalade. Unlike the other reviewer, I thought there was plenty of flavor just as it is.

Huh....this got rave reviews on the website, but I didn't think it was that great. The sauce could use more cornstarch (took more like 15 minutes to thicken if not more). I'd maybe try adding tahini, and/or as one reviewer did, add cooked sweet potato. Maybe some herbs, too - fresh rosemary and/or thyme, maybe parsley. Could switch it up with a different jam, add some garlic.
