    We did get 6 servings out of this recipe. The potatoes continue to absorb moisture and the flavors in the leftovers. The leftovers make an excellent breakfast or brunch dish with fried eggs on top. Going forward I will plan to get at least two meals from this recipe, serving it for dinner with Naan and then the leftovers with fried eggs.

    This was delicious. I was surprised how much flavor the potatoes had from the cooking method. It makes 4 very large portions. We will probably get 6 portions out of it. I used fresh tomatoes, but if you used canned it is a pantry meal. I jazzed up my yogurt topping with lemon and garlic.
