    This is a fantastic recipe. Super easy. I use more apricots, covering the top of the cake. I line the bottom of the pan with parchment paper, holding it in place with a couple of dabs of batter. For sprinkling on top, I like to use turbinado sugar. The cake does freeze well. I cut it into slices, freeze it on a cookie sheet and then put them in a ziplock bag so that we can pull out a slice at a time for a snack.
