    Made this for lunch. Very quick and easy to make and was a lot more filling than I expected. I used wholewheat couscous because that was what I had. The recipe made loads, far more than it seemed like it should. Completely forgot to take a photo of it though as it looked so colourful and tasty we just got stuck in to eating it before I even thought to!
