    The black rice is made with squid ink, and the traditional recipe uses cuttlefish but I had to use squid instead as we cannot get cuttlefish where we live. It is relatively mild in flavour, but the all i oli enhances the dish. The other important thing is to have a very good homemade fish stock. Also, you can add a bit of lemon juice to the cooked rice and it is delicious!!
