Apple-pork ragu with pappardelle from Girl in the Kitchen: How a Top Chef Cooks, Thinks, Shops, Eats, & Drinks by Stephanie Izard

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute dried store-bought pasta for homemade.

This is simple and absolutely delicious. It is not too "appley" as feared and it is very rich and complex for a dish that is quick to make.
