    I had rocket and mushrooms to use up, and everything else was stuff I always have to hand, so this recipe fit the bill perfectly. It turned out well, but it's nothing amazingly special - I was a little disappointed that the pistou is only a small quantity so ends up getting a bit lost. Also the wine comes through quite strongly, I'm not totally sold on the method of cooking the shallots and mushrooms from raw in the wine.
