    Take the turkey out of the fridge an hour or two before cooking. It will cook more evenly from room temperature. A 5kg turkey will feed 5-6 people and will take 2-2.5hrs to cook. It is cooked when internal temperature reaches 70deg (cent.) for over 2 mins. A cooked turkey will stay warm for up to 2 hours loosely covered with foil, and will taste better for it!
