Spice-marinated figs with honey, thyme and yoghurt ice cream and sesame brittle from Wild Garlic, Gooseberries and Me: A Chef's Stories and Recipes from the Land by Denis Cotter

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Wonderful marinade for dealing with a fig glut - took just this to a bring and share garden party without ice cream or brittle. I put some in the deep freeze to try in late Autumn when the trees are bare

An amazing dessert, the figs are delicious but the honey & thyme yoghurt icecream is a revelation. The tastes of both the honey & thyme are subtle but distinct. Use plenty of very fresh thyme and marinate it for as long as you can to bring out the taste. I didn't make the sesame brittle - it was a step too far, I'm not running a restaurant!
