    p. 18 - This simply grilled chicken wowed when combined with the heavenly caramelized tomatoes. This was ridiculously flavourful and the sweet caramel flavours combined with the creamy bocconcini was a match made in heaven. DH has you add some fresh basil just prior to serving. Unfortunately I didn’t have any on hand but I do have some homemade pesto in the freezer so I broke off a piece and stirred it into the hot-from-the-oven tomatoes to give them a kiss of basil. mr bc loved this so much he ate 2 helpings…thus leaving us w no leftovers.
