    Can substitute chuck stew meat for beef round. and a combination of shiitake and cremini mushrooms for white mushrooms.

    I substituted beef chuck for beef round, but otherwise followed the recipe. Really good. It tasted even better after sitting 24 hours. Wait 24 hours before adjusting seasonings.
