    This is a really easy side in that no need to peel the potatoes and the cooked potatoes get coarsely mashed- no slicing or cubing. I increased the gruyere to 2 cups and the butter to 4 tablespoons. This recipe works with most any potato, doesn't have to be a baking potato.
