    Sometimes you’ve got to go back to the source and ‘audit’ your current performance on well loved recipes. I’ve been making this dish for over 30 years. Usually as the base for Chicken Parm. Last night I enjoyed my well pounded cutlet ‘naked’ with just lemon wedges and a steamed artichoke on the side. Biba’s version is just how I’ve been doing it but I have to admit I often slack on adding freshly grated Parmesan to the panko bread crumbs I prefer. Anyway, it turned out ~chef’s kiss~ simple and perfect.
