    This is my family's standard corned beef hash recipe, used very year for the leftover corned beef from St. Patrick's day. I like it with the potatoes, beef, and onions cut quite small, as instructed in the recipe, rather than leaving those ingredients in big hunks. If you use corned beef without any fat left on it, you might have to add more butter by the time you get to the "add beef" stage. Also, by all means do the eggs -- works beautifully and is no trouble.
