    I'm not an oyster fan, but my husband is - he has fond memories of eating oyster stuffing as a kid. This is a great stuffing recipe - excellent texture and flavors. The first time I chopped the oysters up pretty small and they basically melted into the stuffing - leaving them in bigger chunks (and/or adding more) made them more noticeable. We aren't huge fans of sausage/bacon in our stuffings so I cut back the bacon to 4 oz and found that to still be realllly rich and meaty. The second time I subbed some butter for bacon - but bacon-lovers will love the 8 oz of bacon specified in the original recipe!! Any leftovers should be frozen after 1-2 days - our oysters made the leftovers taste unfortunately "fishy" past that point.
