    Pg 162 in UK Edition. This is one of the more simple dishes to make in this book that I've made however this does not compromise on taste, texture and deliciousness. The filling of sweet potatoes and sprouts seemed a little dry as my potatoes has stayed a little crispy and not broken down but with the sauce they were lovely. I used a teaspoon of tamarind paste instead of soaking tamarind pulp. I also didn't use the butter for the pancakes just a smear of rape seed oil instead. Served with some simple steamed tenderstem broccoli this made a tasty, healthy and light meal - perfect - thank you Denis Cotter! If you are ever in Cork in Ireland you must visit his restaurant as it is wonderful.
