    p. 235 – Did the world really need another recipe for mashed potatoes? Well as it turns out, yes . . . at least I can say I did. What differentiates the author’s recipe from others I’ve prepared is her method. She has you rinse the peeled, sliced potatoes until the water runs clear to remove excess starch and, she has you let the drained, cooked potatoes sit to allow some of the steam to escape before you rice or mash them. Ms Bloomfield says this allows them to better absorb the butter and cream. The resulting potatoes are smooth and silky. I only needed about half the cream mixture though so next time I’d start out mixing less to avoid waste. With half a pound of butter this won’t be our go-to recipe but it will be our new company dish. Perfectly delicious.
