    This didn't go as planned. I started putting this together, knowing I didn't have pancetta and thinking I had ricotta. Planned on subbing prosciutto for the pancetta only to find that I was out of that too! Okay, so I fried up bacon to use instead. When it came time to make the custard, uh oh, no ricotta! So I substituted plain Greek yogurt and a handful of finely grated parmigiana reggiano. Luckily I had the rest of the ingredients. My Frankenstein version of this recipe turned out quite delicious! I will make this again, only with all the correct ingredients. First, however, I need to go to the market!
