    This is my go-to chicken pot pie recipe. I have fiddled with it quite a bit to get it to how I like it though. I use a regular potato instead of sweet potato, add a stalk or two of sliced celery, and increase the amount of chicken broth (and proportionally the amount of milk and flour mixture) to make it easier to cook all the veggies. Don't leave out the thyme! I forgot to add it once, and the pie was really missing out on a lot of flavor. It borderline bland without it. If you have a store-bought pie crust and leftover cooked chicken meat, this is an easy weeknight meal.
