    The pancetta and thyme make this a really flavorful potato dish. Don't cut back on the garlic, even tho' it seems like a lot. The garlic melts into the potatoes and mushrooms beautifully and blends in with the flavors. Definite repeater. Served it with the Best Ever Scrambled Eggs recipe from this book.
