    Quite good for healthier pancakes. I used macadamia nuts, stirred into the batter at the end (recipe doesn't specify) and part whole milk that was getting old. I wasn't sure what "fluffy" egg whites meant; I beat them to nearly soft peaks and am glad I did, as they added significant volume to the batter, so I got almost the stated yield (11 pancakes), and noticeably lightened the cooked pancakes.

    Great breakfast I served mine with some strawberries and pure Maple syrup. I didn't have any walnuts so I used pecans.
