Hannah's banana bread from Leon, Book 3: Baking & Puddings by Henry Dimbleby and Claire Ptak

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I followed the recipe and it was delicious!

I made a couple of changes- I added 150g dark muscovado as didn't want it too sweet and only had white spelt so used that and only had 325g of banana so added 25g more yoghurt to compensate. Missed out the nuts so added some raisins and a little nutmeg as I love it. Baked in my top oven at 170 for 50 minutes and it's delicious, really moist and light. I'm not sure whether it's my very favourite banana bread recipe but it's definitely tasty and I wouldn't rule out making it again.

This is the best banana bread recipe to date. Sprinkle a layer of sugar on top before baking to form crust. Bake for 60 mins.

I found it took at least an hour to cook.
