Rubbed and grilled pork loin with apple bourbon barbecue sauce from Big Bob Gibson's BBQ Book: Recipes and Secrets from a Legendary Barbecue Joint by Chris Lilly

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute applewood chips for hickory chips.

We currently only have a gas Weber and used applewood chips in a small smoker box which doesn't add a lot of smoky flavor in all honesty, but despite that this recipe was still terrific. Cooked 10mins each side direct 400F heat then turned the front burner off (leaving the back two on to maintain the 400F heat, but moving the loin so it was as far away as possible from the middle burner) and cooked on indirect heat for 70mins basting with the sauce at 60mins.
