    This was a delicious, easy pie. How do I know? Because I made it, so you can be sure it is easy. It is delicious because at a family dinner, the pie was chosen before Nick's "Supernatural" brownies. There were whiners who didn't get a slice. I am sure there are fancier coconut cream pies and perhaps even more delicious, but they are for the overachievers. I am not one of those. The filling is easy if you don't use a whisk. Read Rhulman's article on using a wooden spoon, preferably a flat edged one. Pay no attention to the time listed for making the cream sauce. When the sauce looks thick enough, take it off the heat. You can make the crust and coconut cream a day ahead and chill. The whipped cream topping can be made and added to the pie 4 hours ahead of serving.
