    This is a great chowder recipe. The sweet vegetables - corn, butternut squash, red bell pepper - taste great together and look very pretty in the creamy broth, too. Great as written. I've also made some modifications over time to suit my preferences. I use a few tablespoons of rendered bacon fat vs. cooking bacon and I leave out the butter - it was a bit rich for me as written. Either cilantro or parsley works well. Grilled chicken is fabulous for some additional smokiness, but broiled and roasted chicken works great, too. Russet potatoes disintegrate a bit and make a thicker chowder, but Yukon Golds get really creamy and delicious and are really nice, too. Freezes pretty well (potatoes disintegrate a bit) - when initially thawed, broth appears "broken" but comes together again once heated.
