    Recipe appears as alternative to "Ragout of ridge gourd or snake gourd" recipe on P193. Bitterness is reduced if made a day ahead. Can substitute "Ginger-garlic paste" recipe on P36 for store-bought paste.

    Good for bitter melon :) I used baby bitter melons and sliced them thinly. Due to circumstances they salted overnight but it doesn't seem to have impacted it. Quite a nice base for the bitter melon - sweet and hot - I added some lime juice as well to increase the tart flavour as the tomatoes are not as tart as those in India. Nice balance of flavours.
