    My husband loves chicken stew - this is a good, solid recipe for a classically flavored version. This particular recipe doesn't cook the chicken until it's falling apart - it still has some texture. Sauce gets thick and gravy-like after simmering. The cream adds nice richness but it also seems to reduce the intensity of the chicken flavors that develop during simmering. I use homemade chicken stock in place of water to increase the chicken intensity - some white wine would work nicely, too, I think. Using carrots and frozen green peas instead of corn has worked well - add carrots with the potatoes and peas towards the end. Freezes pretty well (potatoes always seem to suffer a bit from freezing!).
