Butternut squash & tahini spread from Jerusalem (page 69) by Yotam Ottolenghi and Sami Tamimi

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I have made this several times and always get compliments. Dont over do the date syrup. Its rather sweet already from the squash and cinnamon.

My friend made this as part of a spread and it was divine. It went beautifully with a range of Middle Eastern salads, veggie dishes and breads.

Absolutely delicious. What a delectable fall starter. The result is sweet with perfectly balanced and subtle flavors of cinnamon and tahini. Loved the addition of the date syrup. Very morish. Could eat it with a spoon. Make sure your butternut squash is perfectly ripe.

This is addicting. I’ve made it many times and always omit the pomegranate molasses. Delicious! Have made a shakshuka out of it before, too. So so good.

this dip is UN. REAL. yes, it is absolutely on the sweeter side. it does also make quite a lot of dip, but wow - I ended up eating the leftovers with a spoon. SO. GOOD.

An easy, late in the day dish to cook. It is divine with flatbread. It does make a lot though. A couple of days later I mixed the remainder of the spread with some stock, added chunks of potatoes and other veg, and simmered for a divine soup.

    Delicious dip.

Given everyone’s reviews making note of its sweetness, I thought I’d try to counterbalance this & used a smallish portion of this with lamb. It is still too sweet for our family’s palate, even with a mere drizzle of date syrup (which we are big fans of usually).

The spread is good but it's heavy on the sweet side (particularly with the date syrup). It reminded me almost of a savory version of pumpkin pie filling.

    p. 69 - Well it took me 2 years but I finally got around to making this delicious spread from when I first read reviews of it on CH. Unfortunately my Greek yogurt was past its prime so I ended up subbing crème fraiche. We enjoyed this very much. The flavour of the spread was a bit sweet so I added a splash of lemon juice to balance things out a bit. We enjoyed this very much and it definitely won’t take me 2 years to make it again! I enjoyed this, but not nearly as much as the similar beet and yogurt spread in the book (even though I like butternut squash much more than beets). For me, I found the tahini flavor a bit too dominating of the squash, so I would definitely use less if making again. A pomegranate molasses drizzle instead of date syrup may be good as the spread is pretty sweet on its own. And as Delys77 mentions, this recipe makes a ton of dip, so this isn't a good choice unless you are feeding many people or want to eat this for days!

Made a half recipe, still had leftovers. It was great though, we liked it a lot.

Pg. 69 This yields a large amount of dip. I might consider halving the recipe in the future. Very tasty with pita and pretty good with veggies (some might not like a sweet dip with veggies), plus I think it would be a very interesting addition to a pita sandwich (perhaps paired with pork). Definite winner, but only in specific applications. Great for a party for those who like spreads and dips, especially ones with interesting slightly sweet flavours.
