    Oh, it sounds so simple but this did not curdle- not with lemon juice, more lemon juice and apple cider vinegar. I did some searching and read (in the fine print on other sites) to never use ultra-pasteurized milk. Well. That's the goat's milk the supermarket sells. I added kefir cheese and that finally did the trick, 2 hours into this 30 minute recipe. Looked like a lot of milk stayed liquid, I did not have clear whey. Despite all that, the taste and texture are with it. Will make it again with germy? milk.
