    I made the vegetarian version. I pretty much followed the recipe as written, except I soaked the cannellini beans overnight and I added a rutabaga. I ended up cooking it an extra 30 minutes to further reduce the liquid. Even with that, I ended up with more than 3 quarts of soup whereas she states this makes 2 quarts. I removed half of the soup to put in the freezer for the future before adding the zucchini and ditalini. I liked the soup, but it was definitely better today than it was yesterday. I would have liked more tomato and I think it would have been tastier with broth rather than water. For me, it needed the parmesan to boost the flavor.
