    This was very very close to my mom’s recipe (lost sadly). I like the relative simplicity of this recipe. Double the oregano. I made as written with only 2 large, halved chicken breasts and ratios were great. Served with spaghetti. Consider a splash of red wine or balsamic vinegar to finish. Consider BLSL chicken thighs to speed it up.

    Pretty standard recipe however the peppers and mushrooms got lost in the dish. Next time I would at least double the quantities of vegetables to get a higher ratio. Very tomatoey.
