    I make this every 3/17 - It’s a lovely reminder of our visit to Wicklow. Through the years I’ve made a few modifications. I add an egg and cream cheese to the mashed potatoes. I also dry sauté the tomato paste first extra umami and a good slug of Guinness and Worcestershire
