    This is an amazing tart. The black pepper and Parmesan crust is outstanding. I usually substitute goat cheese for the mozzarella, and use tomatoes from my garden. To prevent it from getting too moist I seal the bottom of the tart with a bit of egg wash or some grated cheese. I also drain my tomato slices for a few minutes before final assembly. One caveat; this is a very rich tart so I serve small slices. The excellent pastry also works well in other savoury tarts.
