    This is so simple, quick and delicious! I quadrupled the amount of tomatoes, garlic and basil - - the amount given in the recipe just seemed too little. Next time I might sear the fish before cooking at a lower temperature. Otherwise, perfect! You could also make this with other white fleshed fish such as snapper, halibut, or cod.
