    Terrific hearty soup! The only change I made was to substitute Italian parsley for the cilantro as both my husband and I are allergic. Use Mexican oregano if you can find it.

    Love this soup! Very hearty and cozy on a cold rainy fall night. Love to serve with cornbread and salad with a bright vinaigrette!
