Venezuelan-style black bean (Caraotas) from Viva Vegan!: 200 Authentic and Fabulous Recipes for Latin Food Lovers by Terry Hope Romero

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Can substitute dark brown sugar for papelón.

Everyone liked - cook like refried beans. Used Salvadorian red beans (Domingo rojo, small red beans). Forgot to add the tomatoes and papelon. Doubled the cumin, added corn and peas at end.

I made with Salvadorian red beans (oops thought I had black beans) and so good!

I love these beans. Complex flavours an a hint of sweetness.
