Just wondering why Eskimo is under European?  I associate Eskimo with North American.

Now I see the same recipes are also under North American. 

Although Eskimos are thought of as being on the North American continent they are also in Greenland and Siberia which fall within Europe. For that reason the Eskimo tag falls within both the North American and European ethnicity groups.

I was searching for a book in my Library about food ways in the United States before WWII. Unfortunately, all books PUBLISHED in the US (almost 300 in my library) came up- including Classic Lebanese Cooking, Classic Turkish Cooking etc. This doesn't seem to be a useful filter in this case.

Barb_N, it sounds like you were filtering in your Bookshelf/Books on Country, which refers to country of publication, and not Ethnicity, which is how books about American cuisine would be tagged (you'll see the general American tag under North America in the Ethnicity filter, along with several sub-categories that relate to the US, including African American, American South, Cajun & Creole, Hawaiian, and Native American).
