I've brought back blocks of speck from Italy.  The only recipes I can find use it finely sliced, & I don't have the equipment or knife skills to do so. 

Can it be cubed & used as pancetta would be ?  Any idea about cooking times, etc. ?  Many thanks.

treat it just as you would bacon ;-) Cubed, diced, sliced.. good substitute for prosciutto, pancetta etc etc  


Its naturally air cured ham, so doesn't actually need cooking ;-)
