With kale still bursting forth in our garden, I tried a recipe adapted from a local food store, with great results, the best kale salad we've had yet. It may be like the last one you tried: dressing of 1/3c olive oil, balsamic vinegar to taste (I use about the same as the oil), 1-2 TBSP orange juice, 1-2 tsp honey (so the dressing is sweet), 1 chopped shallot, salt and oregano to taste; salad ingredients: 2 cups chopped kale, 1/2 chopped apple, in slivers, 2 Tbsp dried cranberries, and 1/4 cup almonds, chopped. You can add a little water to the dressing, or orange juice, depending on your taste for sweetness. This is very delicious!
Next step will be finding delicious recipes for frozen greens, once the final fall harvest starts- but we're not ready for that yet!
