I am never sure if tofu needs to be cooked or just heated through. I have made recipes where cooking has made it very rubbery so I am reluctant to follow recipe advice. ;) Sometimes I'll adapt a recipe by adding tofu- but I am really winging it.

Usually just heated through - although I've never had it go rubbery! And when it is something like a laksa where the fried tofu puffs absorb all the lovely broth, I tend to put them in quite early.

The recipe that resulted in rubbery tofu is Almond tofu with snap peas and soba noodles from Lucid Food. It calls for cooking tofu brushed with the almond sauce for 25 minutes, then turning it and cooking for 25 minutes more!!!
Once I adjusted the cooking time (now I pan fry for a few minutes) it has become one of my favorite recipes.

50 minutes! Wow! I have never cooked tofu so long!

Yeah, I should have known better! I only followed the directions once and now barely heat it through. Those instructions always left me wondering if it needed to be cooked.

What type of tofu was used?  Silken (soft), squeezable silken, medium, Chinese style firm, already grilled?  I've not had problems with tofu going rubbery, however I do not normally use Chinese style firm. 


 


When medium tofu is cooked, it normally becomes lighter in texture and fluffier.  The more you cook, it becomes more so.  This does not apply to silken tofu though.
