Apple cake with struesel topping recipe   Go to last post Go to last unread

Hi, I am looking for a recipe that I think was in either Cooking Light or Eating Well magazine, in the mid-to-late 1990's. I remember making it when I was pregnant with my son (who is nearly 16), so it has to be at least that old. There was a crumble/struesel bit added to the top, and the cake part had cream cheese in the recipe. The apples were mix spice/cinnamon tossed, and I am pretty sure were in the cake not the topping.

I have tried searching both of their websites but have not found something that I think was the cake...

Anyone else remember this recipe? If you do and you can share it we (me & the hubby) would be very grateful :)

It's Apple streusel cake with almonds in their 2003 best recipes. Search the title in the Rat Your Books library recipes and you will find it easily.

Thanks everyone, but this is not the recipe :(
I know the one I used did not have any alcohol added. Maybe there was almond extract, I am not sure. But I do know I was making it either before or just after my son was born , so it would have been any time before 1999 (but possibly from 1994) up to 2001. I used to have subscriptions to EW and CL, which is why I thought the recipe was from them, and my husband remembered that it used cream cheese :)
I hope someone out there knows the same recipe, as it was simple and very tasty, and we have a lot of apples to use this year...

Sounds like you might just have to work through the many and varied combinations of apple struesel cakes in the online collection!! That will be fun! I'd start with this one: doesn't have cream cheese, but it looks divine!! And of course you could just leave the Amaretto out of the recipe from 2003 Cooking Light, which otherwise ticks all your boxes. Enjoy .. look forward to hearing about your adventures in apples...

My latest issue of Cooking Light just arrived and it has an apple cake recipe that sounds very similar to the one you are looking for.  You might look through the issue at the newstand and see if this one is the your-long sought recipe reprinted again.

I found it! It was from 1997 CL magazine :)

The link above should work, but if it does not and someone wants the recipe, I will see if there is another way to share it.

I am SO happy, as this recipe was a favourite of ours and I have fond memoires baking it pre-child. In fact, it may have been one of the things I made while in early labor with my son! I know most people clean in that event, but I had a massive urge to cook that day (and the day prior). My son will be 16 next month, so it will be doubly nostaligic for me to bake this cake now :) (*sigh*, don't they grow up fast....)

So glad you found the recipe Dani! I've taken a look in the EYB Library and it seems this recipe is also contained in one of their compendium volumes The Best of Cooking Light: Over 500 of Our All-Time Greatest Recipes, so I have added the link you shared to the corresponding recipe entry. Since it now has an online link, anyone interested can add this recipe to their EYB Bookshelf.


Since I went apple picking this past weekend and you recommend the recipe so highly, I think I should give it a try myself! I even have this particular Cooking Light cookbook -- all the recipes I've made from it in the past have been great, so this is making me want to peruse it further!
