I’ve been reading through Jubilee and came across reference to a cake from Liberia where they cook caramelized plantain or bananas on gingerbread cake baked in a skillet, a sort of upside-down cake. Does anyone know of a recipe that would be similar to this? This sounds delicious.

I made a banana pie from a Food and Wine magazine that was to die for! Google Yelapa-Style Banana Pie. It's a deceptively easy recipe. I'm a cook, not a baker, and it still turned out great.
