Looking for a good 'food science' type book for pastry baking. Is there a Kenji, Food Lab book for pastry? One that is easy to follow, good recipes, and technically sound. What is your favorite, why and what are the shortcomings of the book. Thanks everyone.

I think of the America’s Test Kitchen books as being more ‘scientific’ & usually have well written instructions. But I don’t think that their versions are always my favorite.

I suggest The Baking Bible by Rose Levy Beranbaum. This covers the main dessert categories with lots of tips and troubleshooting. She has long been known for her reliable recipes and techniques. The Pie and Pastry Bible by Beranbaum is also a great resource.

The Pie and Pastry Bible by Rose Levy Beranbaum is currently just $1.99 for the Kindle version. I don’t own it so I can’t comment on it, but I happened to notice it when I was looking at cookbook deals a few days ago.

Years ago I attended a lecture (with samples!) given by Rose Levy Beranbaum at NYU. Her scientific approach was very impressive.
